The Box

                Starting a business has been such a great experience for me thus far. I feel like I am on a jet, flying through the stars, with the world at my fingertips . . . .


               Today, I got a package in the mail with my Business Cards, Customer Loyalty Cards,  Letterhead, Box Seals and Post Cards! Its like Christmas came early. I have dreamed of this day for years . . . to be able to tell people "Yes, I own my own Business. Here is my Business Card . . if you can see it, think it or even dream it . . I can make it into a cake".


               I remember the first day I stood behind a turntable, spatula in hand, and thought to myself, What have I gotten myself into. I didn't know it then, but I was taking the first step to my career. I was 17, not yet old enough to even legally be behind the bakery counter. The cake decorator had called out for the day. . . . .


              There was a manager and a few other employees all standing around a single cake order form . . just staring. I walked up to the manager and asked for help clocking in since I wasn't scheduled that particular day. He held up a finger, as to tell me to hold on one minute, and told one of the employees waiting, "If we cant get a decorator from another store, we will just have to call the customer and let them know we wont be able to fill her order". As I was waiting, I argued back and forth with myself. I knew I was capable of decorating a cake, but I didn't have any notable training. My manager interrupted my argument with a joke, as he patted me twice on the back, "She will do it. You dont mind do you?" he said with a loud chuckle. Not really thinking straight, I replied "Yes Sir, I would love to try!". I explained to him that I had taken a little cake class when I was very young and did really well. He seemed worried but convinced himself of the idea after I explained how mad the customer would be that her 6 year old wouldn't have a cake for his birthday party. (Ok, so maybe I emphasized that part to him, but hey, it worked!!) . . . . . . . So turn table in front of me and spatula in hand, I iced and decorated the cake. To me, it was awful. Not a thing like I had dreamed or imagined. One corner had crumbs in the icing and the border, being so close to the edge, looked like it could have jumped ship any moment. But when "my first customer" came to pickup the cake, she loved it. Im sure it wasnt the prettiest thing she had ever seen but her son had a cake, with his name on it, for is 6th Birthday Party. And I had tasted something I knew I wanted to pursue . . .


               I got a job as a Cake Decorator a year or two later by luck. I worked then with many other Very Talented (and Trained) Cake Decorators learning little things here and there. After I had learned everything I needed to know through co-workers, books, internet and self training (just plain old everyday practice) I started to get bored . . doing the same thing everyday wasn't fun anymore now that I wasn't learning anything new. My mind was bursting with creativity that I couldn't use because the stores I worked in had so many rules and regulations about what you can and cant do. Even the wedding cakes couldn't be altered to fit the personality of the bride and groom. Here and there I would get a manager that didn't care if I went outside the box. And when I was able to do so . .  Everyone LOVED it! I had a few customers that when I would change stores, would drive across town for a cake from me! It was then, I KNEW, I wanted to own my very own Cake Business . . where everyday would be "out of the box" . . . .

Yummmy...BROWNIES!

     I was in a mood to bake (which for those of you who know me is EXTREMELY uncommon), and . . I wanted something chocolate (thanks to a friend of mine . . . Keisha!! lol!) so I started looking around the house for things to make . . .

     Brownies were the answer to my Baking AND Chocolate Problems!! For some reason though, Brownies just didn't seem like enough. I wanted to be more creative! So I dug around the cabinets and found a package of chocolate chip cookie mix . . this would work!
                                  
                      I mixed the brownies . . . 

Ingredients
  • 1 cup butter
  • 4 (1 ounce) squares unsweetened chocolate
  • 2 cups white sugar
  • 4 eggs
  • 1 tablespoon vegetable oil
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups chopped walnuts (optional)

Directions

In 3-quart saucepan over very low heat, melt butter or margarine and chocolate, stirring the mixture constantly. Remove from heat, and stir the sugar into the chocolate. Allow the mixture to cool slightly. Beat in the eggs one at a time, mixing well after each, then stir in the vanilla and vegetable oil. Combine the flour and salt; stir into the chocolate mixture. Fold in the walnuts.(This step is optional)


And then in a separate bowl, I mixed the chocolate chip cookie mix. This particular time I used a mix but if you want to make them from scratch here is a recipe that I recommend . . . 

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup NESTLE® TOLL HOUSE® Baking Cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter or margarine, softened
  • 2/3 cup sugar
  • 2/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 3/4 cups NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Chunks


Directions

Combine flour, cocoa, baking soda and salt in a medium bowl. Beat butter, sugar, brown sugar and vanilla extract in a large mixing bowl until creamy. Beat in eggs. Gradually beat in flour mixture. Stir in chunks.


     Now that both of the mixes were prepared, I set them aside. I preheated the oven to 350 degrees F. Then sprayed a mini-cupcake pan with a nonstick baking spray. (I recommend a flour based spray such as Bakers Joy.)

     I then made quarter size patties with the cookie mix and lightly pressed one down into each cup in the pan. Then I poured the brownie mix over the cookie until each cup was about 3/4 full. I then baked them for 7-10 minutes or until a toothpick inserted into the brownie would come out mostly clean. I say mostly because once you pull them out of the oven, the brownie will continue to cook for 1-2 minutes longer because of the cookie dough under it. I then let the pan sit for 3-5 minutes and then flipped it over and dumped out the Cookie-Brownies. (A few I had to loosen with a small knife and then dump again on the second and third batch) After they were cooled . . . I decorated them!

We are happy to announce that First Baptist Church of Matthews is allowing us to use their campus for a fall festival!

We will have BBQ for sale, a bake sale (good old fashioned church goodies), Bounce House & Train Rides for the kids, Face Painting, Games, Car Show, Raffle with several AWESOME prizes, Family Portraits and much, much more! Come on out, it's for a good cause...

This event is being held to honor The Lane Family and 
to raise awareness of CHARGE syndrome. Event proceeds will go to the family of Ryan Lane. Ryan is a sweet boy who just celebrated his first birthday. Ryan was diagnosed with CHARGE syndrome during his first year of life. CHARGE Syndrome is a recognizable (genetic) pattern of birth defects which occurs in about one in every 9,000-10,000 births worldwide. It is an extremely complex syndrome, involving extensive medical and physical difficulties that differ from child to child. The vast majority of the time, there is no history of CHARGE syndrome or any other similar conditions in the family. Babies with CHARGE syndrome are often born with life-threatening birth defects, including complex heart defects and breathing problems. They spend many months in the hospital and undergo many surgeries and other treatments. Swallowing and breathing problems make life difficult when they do come home. Most have hearing and vision loss, and balance problems which delay their development and communication. All are likely to require medical and educational intervention for many years. Wedding Bells

I have to say, when I took on this Wedding Cake, I underestimated the time it would take to complete. Each delicate Rose was Handcrafted with Gum Paste (an edible molding agent) . . as were the leaves. 





Every tiny Pearl was rolled out one at a time, coated in a mixture of edible iridescent silver and white pearl dusting glitter, rolled again to remove the excess glitter, and then left to dry for several hours before being strategically glued (with a homemade sugar-water glue) to the cake.



All 3 tiers were lined at their base with a 1 1/2 inch ribbon and then matching ribbon was used to create the bow in the front, which the Bride attached her own broach onto.

Though I very much underestimated the time it would take to complete this Cake . . I do believe it is one of my favorites!

Mickey and Minnie Mouse Cake

This Minnie and Mickey Cake was made for a Woman's 50th Birthday. She is a fan of the Beach and Disney so I incorporated the two.



All the Characters and Details were Handmade out of Fondant Icing.






This Cake has a little over 8 man hours into it not including baking time.

Thomas the Cake!

Paxton wanted a Thomas Cake for his 3rd Birthday Party. His parents not only fulfilled his wish but ordered him a one of a kind Thomas the Train made with an all Moist Chocolate Center and Buttercreme Icing Shell. Thomas' face, number "1"s, Smokestack and Grey Bottom were all made with a Marshmallow Base Fondant. All of it 100% edible.

It starts with only 3 things . .

I have finally decided to crack down and start a business. Since my husband has joined the Army it has been tough to find a job that works with our new lifestyle. Cake Designing and Decorating has always been a passion of mine. I have had this small piece of me that for years wanted to risk it all and just go for it! . . . But the "responsible" part of me said no, its too risky and if you fail you will never pull through it. So why the change of mind? Why take that chance now? Life has thrown so many things at me the last few years. Its been tough but has made me an extremely strong person. I know without a doubt I can do this! I am ready to start a new chapter in my life . . and it all starts with a fresh layer of cake, a spatula, and a nice size bowl of icing . . . Kreative Kakes by Design is officially OPEN for Business!
